Laying duration of a hen.

I have 27 hens in my coop and only get 24 eggs per day. How do I know which chickens aren't laying? Also, I will be adding an additional 10 hens to the flock this fall. How will I know when my older chickens are done laying? Please help.
 
If you get 24 eggs per day pretty consistently that sounds about right to me. Even the hardest working hen is going to skip a day here and there.
 
I'm happy with what they are producing. However, when I add to my flock this fall, how will I know when the older chickens stop laying all together? Also, how would I know if one chicken is not laying now? I'm new to chickens, so I apologize if these seem like dumb questions.
 
I'd like to know this also but I think we just don't know... unless you speak chickense or you put them each into 27 separate prison.
 
I don't know that there is a way, especially if most of their eggs are similar in color and size. Sorry.
