I heard that it is better to let the killed meat bird cool down before it is dipped into the boiling water? Any truth to this?

Also heard to let the bird completely cool down before stuffing it into the freezer. Any truth to that?

Thank you

It's okay to dip the bird in water for a bit to clean it if needed, but not cool before scalding. This allows the feathers to set harder. You need to chill to less than 40 degrees as quickly as possible after eviscerating, usually in ice water, then let it sit in the fridge for 48 hrs before freezing.
