I know when I've butchered my past older hens I was told to let them sit in the fridge a couple of days. I have a bunch of 3 year old hens I just butchered and I want to bag and freeze for the first time. Do I have to let them sit in the fridge a couple of days or can I shrink bag them and freeze them today?
 
No, , but they should be completely cold before putting them in the freezer. Overnight is good. Wonderful stewing hen soup, broth and chicken pot pies, etc. in your future! Envy you!

If you do not have enough room in the frig, a cooler with ice+water will cool them down fast, then when they are ~40 degrees bag and freeze. Keep ice in the cooler until they are cold enough. When you thaw them, then you can let them rest in the frig a couple of days before you use them.
