LOCKDOWN TIME HELP!!

I recently got a few eastern wild turkey eggs from one of our hens secret nests. They have been in the incubator for about a week and a half and when candled i can see the little guys moving around. The problem is that I have no idea when the eggs were laid therefore i don't know when to stop turning them and start lockdown? what happens if i keep turning them past lockdown?
any help would be much appreciated
 
you can gauge the hatch date by the air sack. sometimes they will hatch in the turner but a lot of times they will get confused and not fully hatch.
