I set my eggs into incubation on a sunday night at 10:30 pm a week ago so they are about 8 days into incubation, my question is when do i lockdown? When should i be expecting the hatch? On a sunday or a monday?

I guess you are talking about chicken eggs? You lock-down on day 18 for them. Tonight at 10:30 pm will be 8 days. Thursday night the 27th will be lock down or you can wait until early Friday morning if you prefer. They should start hatching/pipping Saturday the 30th and hatch Sunday the 31st. Some late ones might hatch late Sunday night the 31st. All this is "If" your temp is correct in the incubator.

Yes it's chicken and i've done a couple of hatches before but i wanted to check, thanks, i also have quail eggs with them, but i started incubating the chicken eggs and added the quail eggs four days later, that way they should hatch together.
 
You shouldn't have to poke any holes, the chick should be able to hatch. There are some cases that a chick may have a hard time hatching, however if your temp and humidity are on point that will rule out alot of issues at hatch. Good luck
