Does anyone know how to make mayo without raw eggs? I don't want to risk using raw eggs even if they are from my chickens and fresh, because I have people in my home with compromised immune systems.

i did some searching and found a couple of recipes. one you take a hard boiled egg yolk and break it up and slowly add in boiling watter while whisking into it's smooth then continue with recipe as if it were a raw egg yolk.

another is to make the mayo but before you mix it until its fully emulsified you do this while very slowly heating it up, do not bring it to a simmer or it will "break"

anyone try these methods?

You should coddle your eggs in the shells in rapidly boiling water for about 40 seconds, this works so well. It is the ONLY way I tell my friends to make fresh mayo. You still need to refrigerate it and never leave a dish made with mayo out in the hot sun (this is just sound food safety advice). Once you make it this way you will never go back - welcome "to the dark side" LOL
