Meat bird development (Week 9) - 10 lbs 11oz! Done. Whew!

We thought maybe the skinned birds would not be as moist but it depends on how they are cooked. Has anyone tried to smoke a skinned brid? I'd think the skin would help a lot in the cooking.

How do you all cook your skinned birds? Any special suggestions?

Yes,
We will likely do it again. We will do it in the fall and plan to process in early Nov. We just ate one of the skinless chickens and it was very tasty. I placed it in my smoker for a few hours and it came out perfectly!! Really moist and good flavor. Everyone loved it. We have three kids 9, 10, and 11 and we only finished half the bird for dinner!
I'm sure by Fall, we'll have forgotten how much work it was to raise and process them and we will miss our fresh raised chicken.
I'd hate to be processing them during the summer with all the mess/flies/etc...
 
I can't believe I forgot about this thread adn it just ran away with me!
I know they were all killed but they looked so great and well taken care of, soooo much different than my 'chicken house' refugees.
