Muscovy question

I bought a pair of Muscovy at the Stewart Iowa exotic auction. I thought, and was told they were a pair. They looked like a duck and a drake. However once I got them home and out of the box, I started to wonder if one wasn't a young male. The one I thought was a hen, is the one mounting.
So my question is this, do both male and female make the feathers on their head stand up? If its only the males.. I have 2.. if both sexes do that.. I need to find another way to tell. I have NO eggs and the larger one is the one thats getting mounted. It is also the one with the least red on its face but its obviously young and the carbuncles are not that developed. I can't find my camera or I would post photos.
 
Both do have crests. The male's is typically larger. The males will generally have larger feet also. If the one is mounting, is it also "hissing"? If it's old enough to breed then the males talk by hissing and puff out their cheeks and "huff."

The smaller one, that is doing the mounting does hiss.. Im about to re-name him Mr Snake. The other one doesn't seem to talk at all, its larger. Obviously young as its carbuncles aren't formed but they do go from beads around the eyes to a knot (small) on the nose. The face it is larger then the known male makes me wonder if its a boy?
 
what about their feet size like keeperofthehearth said, males have larger feet. my drake walks around my room thumping his big feet. he's too big for his own good HAHAHA
