Mushrooms, anyone?

Mushroom sauce to die for . . .
Warm one quart of heavy cream over medium low.
add fresh sliced mushrooms (I use nonsense but you can mix it up).
Carefully stirring bring to an gentle boil. C
Continue boiling for 5 min.
Stir in 1 pint of Gorgonzola cheese and lower heat a bit.
stir and keep warm until cheese is completely melted.
remove from heat and cool for about 5 min to thicken.
Poor over any pasta (I use penne)
or put in a buttered bread bowl for a cocktail/potluck dish that gets raves.

We're going on a foray Saturday at Wooly Hollow State Park if its not raining. Its a learning foray more than a collecting foray or we'd just stay here and collect. Of course along with all these chanterelles, there are many many other kinds, some edible and some not. We are just collecting the chanterelles right now because we're not sure enough of the other stuff yet. They ought to come down here for their foray. Of course, you'd have to start with a case of OFF!
