So I was curious...I only have 7 chickens and all are different breeds. When they mate, do you get mixes or do hen or roo genes win out? Seems weird...you don't really see birds in nature cross breeding.

Actually in nature you DO see cross breeding. Anyways, crossing breeds is not the same as crossing the species, and yes, that occurs in nature, too. Cross species usually ends up with infertile offspring, but not always. Cross breeding simply mixes different genesets of the same species.
