If this is a new thing, you could just wait until the chick decides to drink again.
Or you could put a bit of its usual chicken food in a dish and add water. That way the chick can "eat" and get water as well (because the water is soaked into the food.)

Here is an article with lots of pictures of chicken poop, if you want examples of what is normal. Chickens can poop many different colors, and it can be lumps or runny, and all of those can still be normal! Of course some kinds of poop can indicate problems, but there are so many kinds of "normal" that it's easy to be worried when you do not need to be.
He probably drinks when you are not watching. When I sit and watch chickens, I frequently see them eat, but I do not see them drink very often. So I think they spend a lot more time eating than they spend drinking.
Is he acting normal and healthy otherwise?
