We've been eating turkey eggs for the past month or so. They are very good. I don't sell them with the other eggs because I'm afraid they would just be thrown out. As soon as DD11 sees a turkey egg in the fridge, it is scrambled. She loves them. Chickenannie you were asking about texture and flavor. I'm not sure, in a blind taste test that I would be able to tell the difference. They are just bigger, so if you like yolk, there's your egg!
My 3 hens have been laying indiscriminately, all over the place. We placed a dogloo doghouse in the barn last fall hoping they would use that to lay. Nope. A chicken is using it though.
I found 3 eggs in the brooder box yesterday and today I found one in the usual place in front of the feeders. Oh well, I'm not going to worry about it until I'm ready to hatch. If they don't get things figured out, I'll have to use a broody hen to hatch them. I'm afraid of an incubater at this point in the game. Maybe someday.
