I believe that the reason it is recommended to not feed lettuce is that it basically has no nutritional value. However, I also believe that this is more so the case with Iceberg Lettuce; my gals get a blend of red and green lettuces and also Kale which have a higher nutritional value.
With the cabbage, I shred it, they love that.
House full of IT Geeks here; I work in IT Triage/Support, hubby is a Software Developer and son is trained in Networking and Software Development.
I am glad your flock like the feed and kudos to you for going to such lengths to get it for them.
I just wanted to say that while I am happy to share what I feed my gals, I am not sure if all of the feed gurus out there would agree with me; they may have better ideas or feel that I am not feeding something I should.
My gals love it and they seem healthy on it but I would recommend some research into what is best for your flock.
They also have crushed oyster shell available if they want it and I put ACV (Apple Cider Vinegar) in their water. There has been and probably will continue to be much debate about the benefits of ACV but again, while the jury is out on whether it provides any benefit, I am confident it does not do any harm.
Sorry, not sure about Ostrich. I do feed the gals chicken (yeah, I know
) and they love it.
Another good treat, once a week or so, is sardines in oil. Again, my girls love that and the oil is a good way to keep the system lubricated. I know a breeder in the Aussie Thread who feeds her flock sardines and rice once a week.

I have a bit of a ‘everything for a reason’ philosophy. Hubby, not so much. I love teasing him by occasionally saying “everything for a reason” and getting the predicted groan and eye roll
