Thanks again to everyone who answered all my silly questions through this process!
We have eight laying birds right now, have eaten five, and one has died by mysterious means. We have the lower pen filled with younger birds that should start laying in the next week or so. So far, we have not had a surplus of eggs! They make great appetizers, I've baked cornbread with them, and I love to eat them hard-boiled with lunch.

Done! I was so proud! They are bacon-wrapped quail stuffed with goat cheese.

I am loving having quails! We had some difficulties early on with the noisy males (see my blog - Trouble in Paradise entries). We've worked those out, however, and I can conclude that is definitely possible to keep quails in a small suburban space.
I've been giving them cat food and the grounds from my soy milk machine for extra protein. One of our girls is really big. I fondly call her Godzilla. If I ever get a scale, I'll weigh her. I'm definitely going to breed her to see if I can get more quails of that size.
The males, on the other hand, have all turned out rather small. Are they commonly smaller than the females? Only one of our males is large enough to breed Godzilla.
But definitely, thank you to all of you. I wouldn't have been able to do it without help!
