I only make fried chicken tenders.
cut boneless breasts into strips soak in 1 cup milk with 1/2 tsp vinegar for at least an hour
roll/ press into breadcrumbs mixed with panko s/p and onion powder added
fry in skillet 3-5 min on each side in hot oil--don't overcrowd
place on rack in warm oven until dinnertime
 
I do have tenders in the freezer. I hadnt seen the vinegar used, I will have to try that, I think this is a go! Using tenders I can get it done after church and still eat by 1:30
the vinegar turns the milk into buttermilk--I never have that in the house
