Natural Hatching Questions

I am new to Turkeys but loving them. We have 3 Bourbon Reds, 2 hens. One of my hens is nesting/brooding on her eggs. If I read I understand what I am reading:
This is a picture of her nest before she was brooding with her two buds the roosters. Now that she is brooding she will not allow the roosters near her.


As soon as her chicks start hatching I should move her to a maternity pen for 2 months. How big should the maternity pen be? Last count she had 12 eggs in the nesting box. Can I make the maternity box something that I can move around so she will have access to fresh grass/weeds or do I need to have towels or other nesting material in the bottom?

My other hen keeps laying eggs away from our coop. When I find them I move them into the coop every once in a while she will lay one in the coop or move them around. Will she eventually sit on these? She keep laying the eggs where sheep will step on them as they trim my trees so putting a cage that is coyote proof around were she lays her eggs is impossible.
 
Well this isn't related but would you be willing to sell a turkey or two once they hatch?
