Need a good recipe to take to a 4th of July picnic...

Does anyone have any favorite recipes that would be perfect for a hot, 4th of July picnic? I won't take the food until about an hour before we eat, but I feel that all mayo-based salads, etc, are out. I can't remember what I took last year, but I do remember that most people avoided it. It was something my family likes (swear I can't remember what it was tho), but everyone ignored it.

Anyway, thanks in advance for any suggestions!
 
Grandma's salad:
1 box bow-tie pasta
2 cucumbers, peeled, sliced, quartered
1 small can sliced black olives
20 slices pepperoni, quartered
1 small jar pimentos (or hotter pickled pepper if you wish)

Boil pasta and coat lightly with oil. Mix in all above (drained) ingredients. Then cover with the following (unspoilable) dressing:

(Mix well before pouring on pasta)
1 1/2 c apple cider vinegar
1 1/2 c sugar
1 tsp prepared mustard
1 tsp ground black pepper
1/2 tsp Accent spice (it's MSG but ooh so good)
1/2 tsp garlic salt


Edited to add: also baby tomatoes in quarters are also great in this.

Fruit salad
I dump 1 can fruit cocktail in a bowl add a sliced up banana or 2 and add strawberry slicedand maybe some grapes and then mix in a dry package of vanilla pudding mix and stir well place in the fridge before you go to chill and it sets up a bit.





Crab salad
1 pkg imitation crab cut up small chunks
1 package of cooked,rinsed and drained shell pasta
1 package frozen peas
mix all together add mayonaise or miracle whip untill well covered and chill.
frozen peas help to keep it cold until ready.
 
how about a chopped veggie salad with an italian dressing

or i have one thats spaghettti cold, cubes of mozzarella, pepperoni, halved cherry tomatoes, and any other veggie you want to add with italian dressing over it.
 
fruit truffel

angel food cake or pound cake cut into cubes
16 oz fruit cocktail drained
16 oz crushed pineapple with juice
fresh or fozen strawberries or any other fruit
large cool whip
3oz vanilla pudding mixed with 2 cups milk and setting up
small can peaches
In large bowl 1/2 cake on bottom
then all the fruit cocktail, 1/2 pineapple,1/2 strawberries in layers
spread 1/2 cool whip then repeat with cake pineapple strawberries
spread pudding then cool whip and decorate with peaches...

this will be gone in a blink of an eye...I have to make a double batch for my family or I dont get any...
 
My Italian pasta salad:

1/2 a box (about 8 oz) or the tri-colored spiral pasta (starts with an "R" but I can't remember the name) - boil til done, then drain

1 8oz block of cheese (cheddar is what I use though you can use mozzarella, provolone, munster, or whatever you like)- Dice small

1 bottle of reg or reduced fat Italian dressing (use it all)

Then anything you like in an Italian sandwich (Ham, pepperoni, pickles, olives, onions, peppers, tomatoes, etc)- Chopped / diced

Mix everything together and refrigerate overnight. Give it a good stir before serving.
 
tabouleh

get two vboxe of mix from store, mix with water and put in fridge. addd diced tomatoes, cucumber, kalamata olives and fetta. Toss nd serve chilled. Easy, fast, wholesome.
