Need Definition of DAY 1 (day eggs go in or next day)

Sorry I am such a newbee. Is Day 1 the first day you put the eggs in the bater then they hatch on Day 21?

OR,

Is Day 1 the next day after the eggs have been in the bator for one full day and then they hatch on Day 21?

I locked down yesterday. Eggs went into bator on November 3rd. Just want to know when I should start seeing pipping.
