Need help seeting/adjusting wafer thermostat on DIY coolerbater

I understand that I need to turn the L shaped thing, but do I want the wafers to turn on the inside? Or should the wafers stay stationary when I turn the L thingie (what is that thing called anyway?)

Wafer turns with the adjusting screw. The wafer will move closer to or further from the stationary micro switch when turning the adjuster.
