With regards to taking them apart: sure, if you do it without destroying the wood. But, if you build a separate roof structure then these could stay intact! You might find that you will put roosts inside these boxes, and may put some wood or metal sheeting on part of the front to help deflect wind/rain if needed - depending on placement even under a roofed structure. You are in a pretty warm environment and your winter weather is short and mild, so open air is best for you with wind protection.
A woods coop is designed for COLD areas. It provides an air cushion in the back to prevent drafts in winter, but open in front to provide fresh air. In summer, in can have more ventilation, but would be too warm in your location. I agree that they are very attractive!! I wanted one too, but we (nor really anyone else) can see the coop where we placed it, so looks were less important and we opted for a less complex design.
