I think my biggest conundrum is trying to decide on what kind of chicken coop would be best to start with as someone who is a renter vs. owning house/land so I'll need to be mindful and likely can't have any kind of permanent structure.

Anyways, looking forward to journey and learning.
I recently moved from a rental situation where my landlord refused to pay for any structural improvements I made. My solution was to invest in things that would be easy to move. I was able to convert a stall in the barn for minimal costs. I had a free 20x10 carport frame that I covered with free chain link (dumpster diving) and free field fence (junk pile on property) to make their run. As my needs grew, I started buying up every 6x10 chain link panels I could find at auctions, on CL or FB marketplace ($10-75 with a walk through gate). Cattle panels are another favorite ($2-10). They make a strong lightweight cover for the panel pens. The holes are too large and the panels too short (50") to keep chickens in but make an acceptable goose or duck day pen or divider inside the 6' chain link pens.
The cheapest and easiest solution for a coop is to convert an exiting structure on the property. A shed, a swing set, a greenhouse, a pergola, a playhouse... If you can keep your chicken numbers 4-6, you can convert a play or garden shed that can easily fit in the back of a truck when you move. Cold will not be an issue for you but dry will be. Select a high spot in the yard to channel water away. For minimal costs a hoop coop would work. Can build one with minimal skills and tools in a weekend. Will run around $500 for an 8x8 coop/run combo. Can easily deconstruct and move. You can also find used coops that even if you need to hire someone to move it ($200) could be money well spent. A junk travel trailer or truck shell are good starting points. A pallet coop would be virtually free and easy to walk away from when the time comes.
