New to hand turning.

So im new to hand turning and have some questions. I have read alot of topics but dont get the idea of it. So should i lay the vertically or horizontal. If vertical do i turn them top to bottom or side to side and also side to side for horizontal?

I turn side to side an odd number of times each day. Usually 3 or 5 times. I mark one side with an X so I can keep track of what side I should be on.
