'Normal' behavior?

Does anybody know what chickens do when they are happy, sad, or angry etc. I want to be able to tell, so If they are angry one day I don't go and pick them up.. is there something they do? like yesterday, I was holding one and it had its mouth open, not peeping loud, but it was just open.. what does this mean????? is it mad????

I've found that if they have their mouth open they are usually too warm.

it has gotten really hot recently, supposed to be 90 some degrees today....
