I have three pullets that will be 11 weeks tomorrow. Up until tonight I’ve only seen a couple feathers here and there in their coop, now tonight a lot more. I haven’t noticed any injuries or fighting, so can I assume this is normal? Are they molting? Just looks like a lot to me!

Young chickens will go through a small moult in the summer, & winter seasons.

I don’t. All three are the same breed (Speckled Sussex) and I don’t notice any of them with any less or different appearance.
Okay, that's a good thing to notice when they're this young.
When they get to adulthood you should expect the usual seasonal moult.

My silkie hen is the first one to begin her summer moult.
