Organizing A Fair Show--Help!

Some of my 4-H students want to start showing small animals at the local fair. We do not have a poultry or small animal 4-H project in this county. So I am going to approach the Fair Board about starting a small animal show connected to our fair. Are there any good books that can help me learn how to start organizing a poultry/small animal show? I will have to be the chair-person and do most of the work myself with some help from a few friends. At this point, we don't know anything, and don't have any money. O well, ya gotta start somewhere. I do know a lot about chickens just not about organizing shows. Help, please!
