Trying to freeze green beans--never did it before. Picked, washed, stemmed, broke, and blanched 3 min. in boiling water. Putting them in qt. freezer bags. But, how full sh ould I make the bags? Does it make a difference?

You might want to freeze them separated on a cookie sheet before bagging, or they will freeze in a big lump of ice together.

I'm a personal chef, I always freeze the veggies on a cookie (or similar) sheet before combining and freezing the dish.

**TIP:
Make sure to chill food before freezing. it will prevent "sweating" (causing runny excess liquid) and place a layer of plastic wrap directly on the food before sealing with a lid to prevent freezer burn.

I cook then freeze food for my clients all the time. Defrost in the fridge over night NOT on the counter.

I also slightly undercook the meals so that they finish cooking in the oven or microwave.
