Our eggs are hatching, we're not sure what to do here

help the chicks find water, despite mom's objections

Don't bother with that. Mom will drink, babies will copy her and drink too. Chicks learn a lot by watching what other chickens do, and of course the mother already knows how to drink!

If you try to grab chicks and dip their beaks in water while the hen tries to protect them, you likely to have chicks get hurt (by you or by their mother.)

Hi! I'm a first time mom. Mom had three chicks. One is 15 days old, the other two will be two weeks tomorrow. I did not think to look with ours a day early. Mom will eat with her chicks. You won't have to do much just give them start and grow feed and water. Mom will raise them. When it is time she will take them outside if you have a run. That is what ours did. Let your hen raise them on her own. I never lifted mom australorp to see how many chicks and she would not move anyway. The chicks are under mom most of the time. If by chance you check on her you might happen to see them running around by mom, or on her back. Good luck with the chicks. And, have fun.

One thing not covered here is your chances of stagared batch.
If the other hens continued to lay eggs under her all this time, some of the remaining eggs may be weeks away from hatching.
This is not good as your broody may remain on the nest trying to hatch those remaining eggs and in the meantime the chicks already hatched may not be taken off the nest often enough to recieve adequate chick starter and water.
After 48 hours after the first chick hatched, i would remove ( after dark with a dim flashlight) the unhatched eggs. This will help your broody swith gears from broody to chick mom.
Now if you had another broody or incubator you might try to finish them or just throw them out. They might not be good.
Candling might show viability.
BTW a rooster does not know its offspring.
My rooster helped raise some TSC chicks that i put under a broody.
Your particular rooster disposition needs to be determined.
Congrats on your new chicks.
