Overconfident chickens

I've only had my chickens a week and already their really over confident they try to escape everytime i open the door, peck me, jump at my face when i'm crouched down and steal food before i give it too them. How can i scare them a bit to make them abit more shy.

Also i think they might be getting abit bored, what can i put in to keep them occupied and intrested?
