Persimmon recipes needed

Years ago some of our persimmons ripened before frost. In fact, I had to beat the possum and wild animals to them. Dad's horses also liked them. Our trees are now old and too tall to gather. The persimmons splat by the time they hit the ground. We love fruit bread. One of my favorites is strawberry bread, which I found on a Bed & Breadfast site.

I also have a delicious strawberry cake recipe that my cousin gave me. She was featured in the local newspaper as "Cook of the Week" with this recipe. Fortunately for all of us family, she brings it to our family dinners. It does take time to make it but it is worth every minute.

Ozark Hen, this is my cousin Charlotte's strawberry cake recipe. She is a wonderful cook and has been cooking all her life. After she retired, she baked cakes and sold them from her house. She now does long-arm quilting and bakes a few cakes for special people. I baked this one time and it is so moist. I used frozen strawberries. (Re: strawberries, you can use frozen; drain, sweeten berries to taste. Pour juice over baked cake to moisten)


STRAWBERRY CAKE

3 cups self-rising flour
1 1/2 cups sugar
1 stick butter or margarine
1/2 cup vegetable oil
2 3 oz. boxes of strawberry gelatin
1 cup mashed strawberries
1 cup buttermilk
4 large eggs, separated
1 tablespoon vanilla

In mixing bowl, add oil, butter or marg., and sugar and blend.
Then add mashed strawberries, strawberry gelatin, egg yolks, buttermilk, and vanilla.

Beat well at medium speed with electric mixer.
Blend flour in liquid mixture. Beat egg whites and fold into batter.

Pour batter into three greased and floured 9 inch cake pans.

Bake at 325 degrees for 40 to 45 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes and remove from cake pans to cooling rack.

Frost completely cooked cake with strawberry cream cheese icing


STRAWBERRY CREAM CHEESE ICING

2 pounds (6 cups) powdered surar
1 stick butter or margarine
8 oz. cream cheese
1/4 cup strawberries, mashed
2 tablespoons strawberry gelatin
1 tablespoon vanilla

Cream together butter or marg. and cream cheese
Add mashed strawberries, strawberry gelatin, vanilla and sugar
Beat until smooth
