8 weeks of age is the advertised amount of time from hatch to butcher. Hens grow a little slower and of course it depends how they are fed as well but the should be a full grown medium to large sized chicken in 8 weeks. They don't all die of heart attacks either people have kept them a year or more and incorporated then into their breeding programs for sustainable meat birds but in order to do that you have to limit feed as they will eat pretty much continually

Provide constant water and constant feed until 3 weeks of age then leave feed out for 12 hours and take away for 12 hours from 3 weeks until butcher. Or some people feed 2 times a day as much as they will eat in 30 minutes or so our you could leave the food out all the time but that is likely when you would encounter leg issues or heart problems.
 
Like I said constant food until 3 weeks old then start limiting. It will act like it's starving no matter what those things will eat pretty much all time time if they're able. You will actually see it's crop bulging. But no you won't starve it to death by limiting its food intake
