Preparing for chicks

Hi all! Trying to do a little research before purchasing chicks. I'm new to layers so I Just have some questions!
•what are some good cold weather hardy breeds ? That are also docile/ friendly with kids
Where are you? Lots of people come here worrying about their birds in the winter, BUT, if the coop is ventilated enough not to have too much moisture, they are likely fine...ETA...I see Iowa is your locale...whatever you want will likely do just fine.
•when do you start letting them free range?
I started letting mine out in the yard around 7 weeks...But its my fenced in yard. A Hawk was my only real concern.
•How can you protect the flock from predators once they are free ranging?
Stand watch with a 12 gauge and a load of copper plated 6 shot. How big of a range are they ranging over? A suburban yard, 15 acres?
•if you are not planning on hatching chicks what are the benefits of having a rooster? And do they help protect against predators?

Some people like them as alert animals, they crow at anyone coming near and watch for predators, mostly it seems like they're the Kamikaze Crew that runs at any predator while the hens duck for cover.
