Preserving the food you grow

I have an old copy of Stocking Up, although I bought it new!

Yesterday, I received the 2007 AcresUSA book catalog and it listed several other books that might interest you.
They are:
Preserving Food without Freezing or Canning (traditional techniques using salt, oil, sugar, alcohol, vinegar, drying, cold storage, and lactic fermentation) this book was translated from french
Making & Using Dried Foods by Phyllis Hobson
Pickles & Relishes by Andrea Chesman

The catalog has books in many topics that I think you will find interesting. Here's the link to their online catalog: http://www.acresusa.com/books/books.asp?pcid=2

Try this link. It's almost everything you could ever want to know about food preservation.

One word of caution about using older canning recipes.
There is some danger in mixing older recipes with modern ingredients. Most hybred tomatoes for example, don't have the same level of acidity as older varieties, and you can run into serious problems using older recipes that don't address that issue.
