Processed 4 Cornish X's this weekend..test run.

We did a test run of Cornish X's in my tractor - only 4 birds. Worked out pretty good and gave me some ideas for modifications. We processed them on Saturday, brined them for 5-6 hours, and put them in the fridge. They were 7&1/2 weeks old and averaged 4.5lbs (pullets - 4lbs, cockerels - 5lbs, 2 of each) dressed, before brining. In hindsight, they could have gone a few more weeks, but I was hungry, I guess. Monday we put all but one in the freezer. For dinner my wife split one down the middle, seasoned with herbs and some spicy paprika, and threw it on the grill. OH MAN!!! One of the best birds I've ever had. My wife took about 3 bites and commented "You need to do more of these, they are definately worth it!" That one bird made nearly three meals for us! Now I have to go and build a chicken plucker!

Couldn't agree more - we did 16 Cornish X this year and we want to do 50 next year. We also agree we need a plucker too - kind of expensive though. We see chicken sausage and other chicken goodies in our future!
 
We ordered 6 this spring as a test run to see if we liked them enough to do more. We processed them Sunday a.m. and it went pretty smoothly. We haven't eaten one yet, so I guess the jury is still out...

I'm so glad your's were delicious and worth it!!
