Processing according to age or size?

I have 4 Xtra Light Brahma Roos that will be 17 weeks next tuesday, They are super sweet birds and I hate the thought, but I must process them, that has been the plan from the start. I keep putting off the enevitable, but it must be done, Some weigh quite abit more than the others so do I process them all at one time or do I do 1 roo at a time and give them more time to gain some more weight? They all weigh pretty near to 6/7lbs now maybe a little more. I would like just to do it all at one time as this is very stressful for me. We were going to do it last Weds. but I was just sick all night long at work thinking about it, so if were going to do this, I think it best to do them all together and get it over with.(at least I think that would be best of my sanity! being the first time and all.) But what about the chickens if I let some wait will they be tough and stringy if I let them go a few extra weeks? Im trying to do the right thing here, just not sure what it is.

I know ive asked similar ?'s before but were getting down to the knitty gritty here and need some more info and moral support! Thanks Sandy.
 
Do it at one time, and the longer you wait the harder it is. If you already know 1 processing day will be hard for you, why would you want to do it 4 times?
