Processing age for guineas?

I hatched a few more guineas than my land can support and If I don't sell them I will process them for the table when optimal.
What is optimal age/size to dress a guinea ? Will most likely be cocks if I can tell difference by dressing time. Thanks for input, Larry
 
I thought I read a very old publication once that talked about how young guineas were a restaurant delicacy and they slaughtered them around 8 weeks. Can't find it now, though. I've seen "commercial" guinea raising stuff that says 12-16 weeks, but I assume this would be for confinement guineas, not sure if yours would be confined.

We haven't had to eat any of ours yet, but are curious to try it if they ever do get over-populated. It's supposed to be very tasty meat.
