I may be processing some free roosters tomorrow, and the high temperature for the day is only going to be in the low 40s. So besides the obvious need for me to dress warmly and keep a good eye on the scalding water, are there any changes to anything? I've processed in warm summertime temps before, and I guess I'm wondering if there will be a change to how quickly the birds will bleed out, how quickly their bodies will stiffen, things like that.
