Processing lesson in NC?

I've been keeping chickens for several years but there is one thing that I haven't been able to do yet. Process one of my chickens for the freezer. The reason being, I have to DO something to learn it. I have looked on-line until my eyes have bled but I don't feel like I can do it based on just what I see on the computer. For one thing, I can't take my computer outside to wherever I'll be doing the deed. Another, you really can't get a picture to adequately show what you need to find by feel, if that makes sense.

I've had several people through the years to say that they'd help but they never quite full filled that promise. I'd like to learn still though. I've had to kill a few chickens over the years for various reasons but since I didn't know this one thing, those birds' deaths were for nothing.

So, is there anyone in the Davidson County area of NC that would be willing to help me learn? Maybe there are others in the surrounding counties who have this same issue.
 
You could also post your question in the NC state section of "Where am I? Where are you?" forum. Better chance of finding someone from NC there...

The first bird I think is the hardest, it gets easier from there, at least it was for me.

I think one of the most helpful videos I saw (before I ever processed a bird) was of a woman who had butchered hundreds of chickens. She wept a little when she sliced the neck...she said she weeps a bit every time. This helped me in being okay with the pain I would feel in taking a life. I don't think I have actually cried, but have felt some sadness/pain. Feelings that passed through me and later turned into gratitude. As uncomfortable these feelings were, I think suppressing the feelings (a natural inclination) would have been even more uncomfortable. I never saw this on any other video or how-to blog.

Yes, I plan to get some equipment and I've read hundreds of blogs about doing it, but I need to DO it. Pictures do not help me. Oh well.
Yep, I went thru the reading hundred of examples experiences...eventually the only thing left is just to do it.
