Ok I’m shook about this one. I’ve been assuming pullet this whole time as there are no saddle feathers. 7ish months old now. Just watched her/him “mount” one of my older hens. (Didn’t look quite right and took way longer than usual). Then she/him did the “rooster dance” with one of my other obvious roosters and tried to fight with him a little (raised hackles). Did I miss something this whole time?? Is she a he??

I don't see too much saddles or hackles, but I do see some hackles in the first pic, and a few saddles in the third pic, but as you said, there is lack of it.
I'm not sure what you're saying :) Some people use saddle/hackle in reference to just a rooster's feathering and some just say it in reference to both genders and clarify whether they're pointed or not. If you're saying it the first way, then she actually does not have any hackle/saddle feathers because none of her feathers are pointed. If the second way than she actually has many hackle/saddle feathers they're just not pointed. Sorry if I missed your point, just wasn't sure what you're getting at :)

Goodness my, am I bad at this. I see pointed hackles in the first picture, which WOULD make me think male, if it wasn't for the lack of such feathers.

Wait, oh my gosh you're right! I am so glad you mentioned that. I entirely missed it! Zooming in I think I see pointed hackles and definitely see pointed saddles!! I am sorry I said the first statement! I am on your side and am changing my vote to cockerel 😳 Great eye!!
