I have coturnix quail, and think they are charming little birds. They are small, and even the roosters' crowing is not loud enough to seem more than songbirds' song. They have dusty feathers, and really need to have a dust bath, so for 2 reasons, they are quite dusty birds.
But their little eggs are charming, and delicious. They are good if you boil them for just 3 - 3 and 1/2 minutes (because they are so little, this will provide a hard boiled egg that can be eaten peeled or peeled and deviled. I even just tear these in half to give a treat to my dogs or my chickens. If you want to add them to a recipe or cook them other than boiling, you will want to get some
quail egg scissors. The eggs are small enough, and have tough shell membranes, so it's very messy to crack one open without the scissors.
