question about homemade incubator

My hubby and I are trying to build a cabinet style incubator. We have everything but the hot water heater thermostat.....question is, what is it for and how do you use it?

The thermostat is needed to sense the temp in the bator and turn on the heat source if the temp is too low and then turn off the heat source when the temp is too high. For me personally, I would want a thermostat with a smaller differental and more accurate that a hot water thermostat. You can have a lot of problems with a hatch if the temp fluctuate too much.

Hopefully people who have actually tried a hot water thermostat will respond here for you.

is the one I am playing with the little white plastic collar I removed with a small screwdriver by prising it off it changed the range of the t-stat instead of 120-170 it is more like room temp to ??? 170++ ???

ther is a post somewhere here that talks about drilling the bakelite part , I did not drill that part I disassembled the t-stat and drilled the little sheet metal gaurd that holds the snap disc in place
