question about Pre-set thermostates.

I have a question, that i can not find the answer to. I am on my sencond hatch in my 1588 hova-bator, and just asked my self how it can tell what the temperature is?

i want to know how it knows what the temperature is. does it use air sensors or some thing along those lines?
 
There is a thermostat in the top of the housing. When it is below the pre-set temp, heat element kick in. When it reaches it, it shuts off.
