Hi everyone! Just a quick question. We're turning our current shed into our chicken coop. With these vents up above (we have this one as well as one across from this one, plus two windows on opposite walls) should we pull these vents out (so more air circulates through there) and cover them with hardware cloth or leave then as is?

What is your general location/climate? It's likely you will need lots more ventilation than you have there.
I'm about 20 minutes outside of San Francisco.

Should they be vents like the current ones or open with hardware cloth?

Open with hardware cloth is best for maximum airflow. I think you'd need to cut out more of the gable. Aim for 1 square foot of ventilation per bird.
