Question for everyone in the UK or EU?

So I have made a plan. I will need to get two cabinet incubators. One will have 3-4 turning egg trays and the other will be for lockdown. I will incubate them in a way that every trau is a week ahead so I have a constant amount of eggs ready to go into lockdown. I will have different breeds in each tray! I will have the two cabinet incubators under a table that I will stand at while I pack the chicks and fo the other needed steps. I can also package eggs ready for shipment there as well! I will also have a brooder with every and any chick that hatches. If I have high demand I will hatch lots of eggs, if not I will just sell them as pullets and eat the roosters.
