humidity can be checked by using a "hygrometer." You can buy one at Walmart.

The mercury thermometer that comes with the incubator is not so great. There are other ones better. I like the digital "Spot Check," especially made for incubation.
 
We got model #1588, you can use switches to adjust the temp +/-1, 2, 3 degrees or so. We bought a thermometer and hygrometer together, it's made by Acu-Rite.
