Questions on how long to separate pens for breeding.

We are fixing to start separating pens and I want to know how long I should wait before I start collecting eggs. The hens get bred by all the roosters out there(but not over bred) and I don't know how long it will take for pure eggs.

I have heard that a hen will hold sperm for 10 days...so 10 days with one rooster should ensure all eggs there after belong to that one rooster alone...which to me is confusing...should you leave a hen alone for 10 days, and then add a rooster and then the eggs from her will be that roosters chicks? Or do you put a hen and rooster together for 10 days? Not sure which way...but either way 10 days before the hen is sperm free.
