Recipes for homemade spaghetti sauce

Spaghetti Sauce:

Saute a chopped onion and 3-4 garlic cloves in some olive oil in a large saucepan
Add 2 small cans of tomato paste
1 large can of tomato puree
1 large can of crushed tomatoes
Add about 1 1/2 of that large can filled with water
Add either dried or fresh basil
oregano
red pepper
A couple of tablespoons of brown sugar
A pinch of cinnamon
A bay leaf or 2
Salt and pepper to taste
About a quarter to a half cup of red wine (optional)..if you don't have wine, just put a couple splashes of balsamic vinegar if you like.
Simmer for approximately 4 hours, or until you get the consistency you like

My Spaghetti Sauce recipe (for canning)

This is per 5 gallon bucket (1/2 bushel roma tomatoes)

I boil down contents of 5 gal pail and run it through a tomato strainer. Then I place the tomato in a rectagular roaster so that it covers both front and back burners on my stove for rendering down. Then I add:
2 c. chopped onions
3 cloves garlic-minced
2 TBSP Basil
2 tsp Thyme
2 TBSP chopped celery (1 stalk)
3 TBSP oregano
3 Bay leaves (broken up)
3 green peppers (chopped to desired consistency)
3 TBSP sugar
1/4 tsp black pepper

I then boil this down to the desired thickness that I want for my pasta sauce. I then pressure cook for 25 min./quarts.
