Rescued chickens, what could the issues be?

I rescued 2 hens from my neighbors a couple of days ago. They weren't be fed or given water. The coop had 4-6 inches of poop everywhere, I needed to help them. These are some statements about their health and behavior, I'd be grateful for any insights!

Both of them will be a year old next month. One of them is a Tractor Supply "Southern Rambler," (Tizzy) the other is a Blue Ameraucana (America). Temporarily named until they go to their new home.

I've been feeding them for the past week what I make for my chickens, which is a mix of black oil sunflower seeds, oats, corn, millet, and flax seeds.

I have them on my sun porch now, beginning yesterday morning. (picking up poop constantly 🤪! Last night was their first night in. I have a large dog crate with a nest box and pine shavings, so I put them in it, shut the door, and covered the crate with a dark sheet which calmed them down nicely. During the day I've the crate door open.

They are drinking a lot of water, especially Tizzy. She is also gobbling up the feed like she's starving (can chickens have food insecurity?) They don't seem to have impacted crops because they looked empty this morning.

Their poops today are big and watery. I've attached pics.

I'm pretty sure they have mites because they're doing a lot more head shaking and scratching than my girls have ever done. I don't want to freak them out by giving them a thorough check until I have something to treat them with. I have food grade diatomaceous earth, can I use that?

I put apple cider vinegar in their water this morning, but does that just help prevent worms or will it get rid of worms if they have them? And how do I know if they have worms?

America seems to be enjoying her time as an inside hen, Tizzy not so much, but she's calmed down some. They've free-ranged all their lives.

Birds actually appear to be in great feather/condition. I would provide an all flock raiser with oyster shell supplementation or a layer ration. Apple cider has no impact whatsoever on worms. It may have some impact on gut flora by changing ph.
