Roofing?

Not sure waht you mean by "peak on gabled roof".
If it's this juncture, then flashing would be needed.

Will other end be the same?
What will roof on the square part sticking up be?
Almost looks like a monitor roof, tho it needs some slope too.

Might want to do some graph paper sketching before you go much further, tho maybe it's already in your head, but I can't see there :gig

It's going to be something like the picture that neo71665 posted. Basically two separate coops joined together by a monitor creating a breezeway in the center.

I'm just unsure of how to get a seal on that 'seam' on the top peak I didn't see any pieces that would fit the shape of the metal roofing sheets at home depot.

Wasn't trying to step on ya toes but not everybody knows different roofing style names.

Yeah I would add some doors in the top so you could open them in the summer. Hardware cloth covered openings of course to keep critters out.

I should have known to refer to it as a monitor roof but I've been working myself dumb out in the heat the past couple days. And yea, that's the plan, make nice big windows with hardware cloth and a door to keep out the rain.

Thats the "correct" way to do it, now thats said all we do on barns is get some aluminum flashing and bend it in a L shape. lay it in the corner where one leg is on the wall and the other is on the top of the tin. Nail it to the wall. You then put your siding or whatever over it. You are copying the upper part in that picture that is under the siding but over the tin. You get flashing in long rolls.
I don't build barns and sheds up to home standards.
