Rooster quirky behavior

Happy Weekend!
So I have a 3 month old Olive Egger Rooster: pictures attached. Our flock consists of 3 different breeds, 2 of each so for a total of 6 chickens: Black laced Red Wyandotte, Olive Egger and Blue Plymouth Rock. We’ve had them all since day 2 life. We are first time chicken owners .
My question:
1. The roo seems the meanest to his same breed the Olive Egger hen, why is that? He pokes her the most. She can be a tad dramatic at times because We’ve seen him do his usual rooster behavior with all of the girls but he just seems more relentless with her and as a result she tries to avoid him and sometimes hangs back.
2. Is there a book on rooster behavior anyone can recommend? I’ve ordered How to speak chicken.
3. Last question, sometimes the Roo pouts in the corner when it’s time to get in the coop. Any ideas as to why? He’s a pretty temperamental guy and I want to understand him more. Thanks in advance. Have a wonderful night!

Roosters tend to have a favorite hen, so the Oliver Egger must be his. Make sure to check her for feather loss on the back every now and then.

I have no idea about the last question. Maybe he's an outdoorsy type, and don't like being inside.
 
At 3 month of age the rooster is starting his attempts to mate while the pullets of the same age still too young. They need at least 2-3 more month to mature and welcome his attention.

The Olive Egger pullet might be at the bottom of the pecking order and so he will harass her the most. But some roosters just prefer hens of their own breed.
