My mom and dad "husked" our roosters spurs last night and he seemed to be doing good only a little but of bleeding but he has now started to peck at his own spurs making then bleed even more and the hens are pecking at them too. How do we get him to stop? And how do we get them to stop bleeding?

You can stop the bleeding with a styptic pencil if you have one. Otherwise, use some flour or corn starch. There are also products sold in feed/animal care stores for this. You may have to separate him and wrap his legs with some vet wrap to stop him. He'll get it off, in time, but maybe you can tape the vet wrap on so it stays long enough for them to start healing.
